Here at THE BLACK HORSE, Chef Brian Ferree and his professional staff use only the freshest, finest, wholesome ingredients to create world class cuisine in Northern Lancaster County’s Pennsylvania Dutch Country.

CERTIFIED ANGUS BEEF™ is the minimum grade of beef we serve. In 1965 and again in 1976 The United States Department of Agriculture (USDA) lowered and broadened its standards for the USDA Prime and Choice beef grades. The cumulative result of these actions is that today 65% of all USDA graded beef qualifies for the USDA Choice grade. Hence there is a wide variation and inconsistency of palatability within today’s Choice beef grade.
In 1978 the American Angus Association, the world’s largest beef breed registry, responded by developing its Certified Angus Beef Program to provide consumers with consistently high quality beef products so exceptional that they are separately certified by the USDA to meet Certified Angus Beef Program’s rigid standards for marbling, texture, and firmness – standards more selective than the USDA’s own Choice and Prime grades. Today only 7% of all Prime and Choice graded beef qualifies for the Certified Angus Beef grade. CERTIFIED ANGUS BEEF products are the “top of the line” beef – reliably tender, juicy, and tasty. It’s the real thing. It costs more. Our CERTIFIED ANGUS BEEF steaks and prime rib are aged at least four weeks and are never frozen.
As market availability and price permit, we also offer USDA Prime and Dry-aged cuts of beef in our DAILY ADDITIONS to the MENU. Occasionally we offer Japan’s KOBE beef.

POULTRY at THE BLACK HORSE is locally raised on natural, organic feeds – usually free-range.

SEAFOOD at THE BLACK HORSE is chosen by Chef Brian Ferree for its freshness and wholesomeness. Since seafood is largely an unregulated commodity, the critical eye of experience is required to assure excellence. “Top-of-the-catch” is always our specification. Knowledge of species and their seasons is also important. While most of our seafood is fresh, some species are available only frozen because they come from far corners of the world. Our crab cakes are 100% jumbo lump crab meat every day of the year – regardless of seasonal price fluctuations.

VEGETABLES
Our vegetables are always fresh. All our salad greens are fresh organic including local baby bok choy.

DESSERTS

THE BLACK HORSE proudly features only its own house-made desserts. Created from the purest natural ingredients, these authentic desserts may include but are not limited to: sorbet, ice cream, New York style cheesecake, creme brulee, chocolate truffles, bananas Foster, Key lime pie, et cetera. For those whose dessert preferences are liquid, we carry a vast array of after dinner drinks ranging from the serious and traditional to the silly and trendy. Your server or the bartender will be happy will be to help you to narrow the choices. Perhaps you may want to adjourn to the tavern to survey the liquid potentials.

COFFEE       ESPRESSO       CAPPUCCINO       LATTES

Our regular coffee is a freshly brewed Mocha Java blend. THE BLACK HORSE is famous for its international alcoholic coffee concoctions – limited only by our vast inventory of spirits. Our decaffeinated coffee is 100% Colombian. Regular and decaffeinated espresso, cappuccino, and lattes are also available.
